At a time when most Europeans are confronting record prices in the supermarket aisle, the idea of a celebrity chef smothering their Caprese salad, gazpacho, or dolmas in extra-virgin olive oil is tremendously audacious. But why have the costs of olive oil increased so much? The oldest trees that have been grown on Earth have been displaying signs of danger for the past ten years, as many olive groves in the Mediterranean have dried up as a result of more extreme weather, including droughts and powerful hailstorms that cause flooding.
